Homemade Cheese Spread Recipe
Curdle the Milk – Begin by heating full-fat milk in a pan over medium heat until it’s warm. Add vinegar or lemon juice, stirring gently until the milk curdles and forms chenna. Strain the chenna using a muslin cloth or fine sieve to remove excess water.
Prepare the Mixture – In a blender, combine the strained chenna, 2-3 tbsp of milk, butter, and salt. In a small bowl, mix a pinch of Eno with a little water until it fizzes. Once the fizz settles, add this mixture to the blender.
Blend to Smoothness – Blend everything together until you achieve a smooth, creamy paste.
Cook the Mixture – Transfer the mixture to a pan and cook on a low flame, stirring continuously. Continue to cook until the mixture becomes glossy and stretchy.
